Ingredients

  • 2 cups fresh rhubarb, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup butter, softened
  • 1/4 cup sugar
  • 1 egg
  • Powdered sugar for dusting

Instructions

  1. Prepare the rhubarb filling by cooking rhubarb until tender, then mixing it with cream cheese, sugar, and vanilla until smooth.
  2. In a mixing bowl, blend flour, butter, sugar, and egg to form the dough.
  3. Chill the dough for at least 30 minutes.
  4. Roll out the dough and cut into circles.
  5. Fill the circles with the rhubarb cheesecake mixture and fold the edges over to seal.
  6. Place the bites on a baking sheet and brush with an egg wash.
  7. Bake in a preheated oven at 350°F (175°C) for 25 minutes or until golden brown.
