Instructions
- Prepare the rhubarb filling by cooking rhubarb until tender, then mixing it with cream cheese, sugar, and vanilla until smooth.
- In a mixing bowl, blend flour, butter, sugar, and egg to form the dough.
- Chill the dough for at least 30 minutes.
- Roll out the dough and cut into circles.
- Fill the circles with the rhubarb cheesecake mixture and fold the edges over to seal.
- Place the bites on a baking sheet and brush with an egg wash.
- Bake in a preheated oven at 350°F (175°C) for 25 minutes or until golden brown.
- Dust with powdered sugar before serving.
