Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons red food coloring
  • 2 tablespoons cocoa powder
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, for filling
  • 1/2 cup powdered sugar, for filling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg, red food coloring, and cocoa powder; mix until combined.
  4. In a separate bowl, whisk together the flour and baking soda.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Chill the dough for about 30 minutes in the refrigerator.
  7. Once chilled, scoop out balls of dough and create a small indent in the center of each ball.
  8. Bake for 10 minutes or until set around the edges.
  9. Allow cookies to cool completely before adding the cream cheese filling.
  10. To make the filling, beat the cream cheese and powdered sugar together until smooth and spreadable.
  11. Fill the indents in the cooled cookies with the cream cheese mixture.
