Instructions
- In a large bowl, mix warm milk with yeast and sugar. Let it foam for 5 minutes.
- Add butter, flour, salt, and lemon zest. Mix until combined.
- Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise in a warm area until doubled in size (about 1 hour).
- Prepare the filling by mixing raspberries, lemon zest, and poppy seeds in a bowl.
- Roll out the dough into a rectangle, spread the filling evenly, and roll tightly into a spiral.
- Place in a greased baking dish, cover, and let rise for 30 minutes.
- Bake in a preheated oven at 350°F (175°C) for 25 minutes or until golden brown.
- Cool before glazing with a lemon glaze if desired.
