- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh raspberries, pureed
- Extra raspberries for garnish
Instructions
- Preheat oven to 325°F (160°C) and line a baking dish with parchment paper.
- Mix graham cracker crumbs, 1/3 cup sugar, and melted butter in a bowl. Press into the bottom of the baking dish and bake for about 10 minutes until set.
- In another bowl, blend cream cheese, 1 cup sugar, eggs, and vanilla until smooth.
- Gently fold in pureed raspberries, then pour over the baked crust.
- Swirl in extra raspberry puree for a marbled effect.
- Bake for an additional 30 minutes or until set around the edges but slightly jiggly in the center.
- Cool in the pan for 2 hours before refrigerating for at least 2 hours before cutting.
- Serve sliced, garnished with fresh raspberries and optional whipped cream or ice cream.
Notes
Use fresh raspberries for the best flavor; ensure cream cheese and eggs are at room temperature for a smooth filling.
