Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries, pureed
  • Extra raspberries for garnish

Instructions

  1. Preheat oven to 325°F (160°C) and line a baking dish with parchment paper.
  2. Mix graham cracker crumbs, 1/3 cup sugar, and melted butter in a bowl. Press into the bottom of the baking dish and bake for about 10 minutes until set.
  3. In another bowl, blend cream cheese, 1 cup sugar, eggs, and vanilla until smooth.
  4. Gently fold in pureed raspberries, then pour over the baked crust.
  5. Swirl in extra raspberry puree for a marbled effect.
  6. Bake for an additional 30 minutes or until set around the edges but slightly jiggly in the center.
  7. Cool in the pan for 2 hours before refrigerating for at least 2 hours before cutting.
  8. Serve sliced, garnished with fresh raspberries and optional whipped cream or ice cream.
