Ingredients

  • 1 rotisserie chicken or 2 cups cooked chicken
  • 2 packs instant ramen noodles (with or without flavor packet)
  • 4 cups low-sodium chicken broth
  • 2 soft-boiled eggs
  • 12 cups assorted vegetables (spinach, corn, mushrooms)
  • A splash of oil for cooking
  • Minced garlic (to taste)
  • Fresh or ground ginger (to taste)
  • Soy sauce (to taste)
  • Green onions (for garnish)
  • Additional toppings: sesame seeds, quick-pickled carrots, nori, chili oil

Instructions

  1. Heat a splash of oil in a pot and add minced garlic and ginger, sauté until fragrant.
  2. Pour in chicken broth and bring to a low boil.
  3. While the broth is heating, slice or shred the rotisserie chicken.
  4. Add the chicken and soy sauce to the broth. Adjust flavor with water or more soy sauce if necessary.
  5. Add the noodles and cook until soft.
  6. Stir in the vegetables and heat through.
  7. Ladle the ramen into bowls and top with soft-boiled eggs and any additional toppings.

Notes

Use rotisserie chicken for convenience. You can customize with different vegetables and toppings based on your preferences.
