Ingredients

- 1 rotisserie chicken or 2 cups cooked chicken
- 2 packs instant ramen noodles (with or without flavor packet)
- 4 cups low-sodium chicken broth
- 2 soft-boiled eggs
- 1–2 cups assorted vegetables (spinach, corn, mushrooms)
- A splash of oil for cooking
- Minced garlic (to taste)
- Fresh or ground ginger (to taste)
- Soy sauce (to taste)
- Green onions (for garnish)
- Additional toppings: sesame seeds, quick-pickled carrots, nori, chili oil
Instructions
- Heat a splash of oil in a pot and add minced garlic and ginger, sauté until fragrant.
- Pour in chicken broth and bring to a low boil.
- While the broth is heating, slice or shred the rotisserie chicken.
- Add the chicken and soy sauce to the broth. Adjust flavor with water or more soy sauce if necessary.
- Add the noodles and cook until soft.
- Stir in the vegetables and heat through.
- Ladle the ramen into bowls and top with soft-boiled eggs and any additional toppings.
Notes
Use rotisserie chicken for convenience. You can customize with different vegetables and toppings based on your preferences.
