Description
A fast, flavorful, and nutritious shrimp stir fry with noodles that can be made in under 30 minutes.
Ingredients

- 8 oz noodles (egg noodles, udon, or rice noodles)
- 1 lb peeled and deveined shrimp
- 1–2 tbsp neutral oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 tbsp minced ginger
- 2 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp honey
- 1/4 cup chicken broth
- Sliced scallions for garnish
- Toasted sesame seeds for garnish
Instructions
- Cook noodles in salted boiling water until al dente, drain, and toss with 1 tsp oil.
- Heat a wok or large skillet over medium-high heat, adding 1–2 tbsp oil.
- Sear shrimp for 1–2 minutes per side until opaque, then remove from the pan.
- Stir-fry bell pepper, broccoli, and snap peas for 2–3 minutes.
- Add minced ginger and garlic, return shrimp and cooked noodles to the pan.
- Pour in the sauce and toss over high heat to coat, reducing sauce for 1–2 minutes.
- Finish with sliced scallions and sesame seeds before serving.
Notes
For best texture, use a hot pan and do not overcrowd. Adjust sauce to taste to avoid over-salting.
