- 2 eggs

- 1 splash soy sauce
- Optional veggies (frozen peas, corn, carrots)
- Green onions or chives for garnish

Instructions
- Heat a large skillet or wok and add 1-2 tablespoons of oil.
- Crack the eggs into the skillet and scramble them until fluffy, then scoop them out.
- Add another splash of oil and toss in the cold rice, breaking up clumps.
- Add soy sauce and any veggies, stirring until heated through.
- Return the eggs to the pan, mix everything together, and garnish with green onions and pepper.
Notes
Using day-old rice ensures the best texture. Adjust the soy sauce to your taste for flavor.
