- 1 large red onion, thinly sliced
- 1 cup apple cider vinegar
- 1 cup filtered water
- 2 tablespoons granulated sugar
- 1 teaspoon sea salt
- Optional: whole peppercorns or smashed garlic cloves
Instructions
- Thinly slice the red onion as finely as possible.
- In a small saucepan over medium heat, mix the apple cider vinegar, filtered water, sugar, and sea salt, and stir until the sugar is completely dissolved.
- If desired, add optional whole peppercorns or smashed garlic cloves and let the mixture steep for a few minutes.
- Pour the warm brine over the onion slices in a clean glass jar, ensuring all slices are submerged.
- Allow to cool at room temperature before sealing the jar and refrigerating. They’ll be ready to enjoy in about an hour, but taste better after 24 hours!
Notes
Use a mandoline slicer for perfectly thin onion slices. Experiment with different types of vinegar and add chopped herbs for extra flavor.
