Ingredients

  • 1 large red onion, thinly sliced
  • 1 cup apple cider vinegar
  • 1 cup filtered water
  • 2 tablespoons granulated sugar
  • 1 teaspoon sea salt
  • Optional: whole peppercorns or smashed garlic cloves

Instructions

  1. Thinly slice the red onion as finely as possible.
  2. In a small saucepan over medium heat, mix the apple cider vinegar, filtered water, sugar, and sea salt, and stir until the sugar is completely dissolved.
  3. If desired, add optional whole peppercorns or smashed garlic cloves and let the mixture steep for a few minutes.
  4. Pour the warm brine over the onion slices in a clean glass jar, ensuring all slices are submerged.
  5. Allow to cool at room temperature before sealing the jar and refrigerating. They’ll be ready to enjoy in about an hour, but taste better after 24 hours!

Notes

Use a mandoline slicer for perfectly thin onion slices. Experiment with different types of vinegar and add chopped herbs for extra flavor.
