Ingredients

  • 8 oz cream cheese
  • 1/4 cup sugar (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
  2. In a mixing bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, mix together pumpkin puree, eggs, sugar, and oil until smooth.
  4. Combine the wet and dry ingredients without overmixing.
  5. In another bowl, beat cream cheese, sugar, and vanilla until smooth for the filling.
  6. Fill muffin liners with batter, add a dollop of cream cheese mixture, and cover with more batter.
  7. Bake for 20-25 minutes, checking for doneness with a toothpick.
  8. Cool muffins in the tin for 5 minutes before transferring to a wire rack.
