Instructions

- In a separate bowl, mix together pumpkin puree, eggs, sugar, and oil until smooth.
- Combine the wet and dry ingredients without overmixing.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth for the filling.
- Fill muffin liners with batter, add a dollop of cream cheese mixture, and cover with more batter.
- Bake for 20-25 minutes, checking for doneness with a toothpick.
- Cool muffins in the tin for 5 minutes before transferring to a wire rack.
