- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 cup pumpkin puree (not pie filling)
- 2 tsp chai spice blend
- 1 cup brewed espresso or strong coffee (cooled)
- 24 ladyfingers
Instructions
- Brew your espresso or strong coffee and allow it to cool slightly. Stir in a pinch of chai spice.
- In a bowl, whip the heavy cream with powdered sugar until soft peaks form.
- In another bowl, mix the mascarpone cheese with pumpkin puree and chai spice until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Quickly dip the ladyfingers in the cooled coffee and layer them in a dish. Spread half of the pumpkin mixture over the ladyfingers.
- Repeat the layering process with the remaining ladyfingers and top with any leftover cream.
- Cover and refrigerate for at least four hours or overnight before serving.
Notes
Make sure your coffee is cooled fully before dipping the ladyfingers to prevent them from getting too soggy. Adjust the chai spice to suit your taste preferences.
