Description

Delightful pumpkin biscuits that are fluffy and flavorful, perfect for any meal.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup cold butter, cubed
  • 1 cup pumpkin puree
  • 1/2 cup buttermilk
  • 1/4 cup sugars (brown and/or white)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, mix the pumpkin puree, buttermilk, and sugars until well combined.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Gently fold the wet ingredients into the dry ingredients until just combined; avoid overmixing.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet.
  7. Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
