- 1 cup pumpkin puree
- 1/2 cup buttermilk
- 1/4 cup sugars (brown and/or white)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and spices.
- In another bowl, mix the pumpkin puree, buttermilk, and sugars until well combined.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gently fold the wet ingredients into the dry ingredients until just combined; avoid overmixing.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
