- 3 large eggs
- 2 cups small-curd cottage cheese, drained
- 1/2 cup grated Parmesan cheese
- 1 1/2 cups marinara sauce
- 1 to 1 1/2 cups shredded mozzarella cheese
- 1 cup chopped bell peppers (optional)
- 1/2 cup sliced pepperoni (optional)
- 1 cup sautéed mushrooms (optional)
- Cooking oil for greasing the baking dish
Instructions
- Preheat the oven to 375°F (190°C).
- Drain the cottage cheese in a fine mesh sieve for 10 minutes.
- In a bowl, whisk together the drained cottage cheese, eggs, and Parmesan cheese.
- Stir in the marinara sauce, mozzarella, and any chosen toppings.
- Spread the mixture in a lightly oiled 9×13-inch baking dish.
- Bake for 25–30 minutes until the center is set and edges are bubbling.
- If desired, broil for 1–2 minutes for a golden top, watching closely.
