- 1 pound ground chicken
- 1 tablespoon neutral oil
- 1 tablespoon minced ginger
- 2 cloves minced garlic
- 2 cups finely shredded cabbage
- 1 small grated carrot
- 2 chopped scallions
- 1/4 cup chopped water chestnuts (optional)
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or brown sugar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1 tablespoon water
- Butter or bibb lettuce leaves for serving
- Sesame seeds for topping
Instructions
- Heat a 10–12 inch skillet over medium-high heat with neutral oil and brown the ground chicken in batches.
- Lower heat, then add minced ginger and garlic, stirring in the shredded cabbage, grated carrot, chopped scallions, and water chestnuts.
- Cook until vegetables are just tender, about 2–3 minutes.
- Make a sauce by mixing soy sauce, rice vinegar, honey or brown sugar, sesame oil, and cornstarch dissolved in water; add to the pan and simmer for 30–60 seconds until glossy.
- Spoon the filling into washed, chilled lettuce leaves and top with sesame seeds and extra scallions.
Notes
Use finely shredded cabbage for a delightful crunch and avoid overcrowding the pan for better browning.
