- 1 lb fresh green beans
- 1/2 cup pomegranate juice
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1/2 tsp salt
- 1/4 cup fresh pomegranate seeds
Instructions
- Blanch green beans in boiling water for 3-4 minutes until bright green and crisp.
- Prepare an ice bath and immediately transfer the blanched beans to cool.
- In a saucepan, combine pomegranate juice, balsamic vinegar, honey, and salt, then simmer until thickened.
- Toss the cooled green beans in the pomegranate glaze.
- Serve warm, garnished with fresh pomegranate seeds.
Notes
For a vegan option, substitute honey with maple syrup. Adjust sweetness of glaze as desired.
