Description

A flavorful one-pot dish that combines the tart sweetness of pomegranate with tender chicken and fluffy rice for a vibrant and nutritious meal.


Ingredients

Scale
  • 4 chicken thighs or breasts
  • 1 cup jasmine rice
  • 1 cup chicken broth
  • 1/2 cup pomegranate juice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh pomegranate seeds for garnish
  • Fresh herbs (parsley or mint) for garnish

Instructions

  1. Marinate the chicken in olive oil, garlic, salt, pepper, and a splash of pomegranate juice for at least 30 minutes.
  2. In a heavy-bottomed pot, brown the marinated chicken over medium heat.
  3. Remove chicken and add onions and garlic to sauté until fragrant.
  4. Add rice, chicken broth, and pomegranate juice to the pot, stirring well.
  5. Return chicken to the pot and bring to a simmer.
  6. Cover and let everything simmer until rice is tender and chicken is cooked through.
  7. Just before serving, sprinkle fresh pomegranate seeds over the top.

Notes

For best results, use 100% pure pomegranate juice and adjust the spices according to your taste.
