- 4 chicken thighs or breasts
- 1 cup jasmine rice
- 1 cup chicken broth
- 1/2 cup pomegranate juice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh pomegranate seeds for garnish
- Fresh herbs (parsley or mint) for garnish
Instructions
- Marinate the chicken in olive oil, garlic, salt, pepper, and a splash of pomegranate juice for at least 30 minutes.
- In a heavy-bottomed pot, brown the marinated chicken over medium heat.
- Remove chicken and add onions and garlic to sauté until fragrant.
- Add rice, chicken broth, and pomegranate juice to the pot, stirring well.
- Return chicken to the pot and bring to a simmer.
- Cover and let everything simmer until rice is tender and chicken is cooked through.
- Just before serving, sprinkle fresh pomegranate seeds over the top.
Notes
For best results, use 100% pure pomegranate juice and adjust the spices according to your taste.
