Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, beat the softened butter and sugar until creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and dragon fruit puree.
- In another bowl, whisk together the flour and baking powder. Gradually add this to the wet mixture, alternating with milk, and mix until smooth. If desired, add pink food coloring to achieve a vibrant hue.
- Pour the batter evenly into the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- Once cooled, frost the cakes with cream cheese frosting and top with fresh dragon fruit slices.
