Description

Delightful cookies that combine the tropical flavors of pineapple and coconut, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 cup unsweetened shredded coconut
  • 1/2 cup pineapple preserves
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the vanilla extract and mix well.
  4. Gradually add the flour, shredded coconut, and salt, mixing until combined.
  5. Chill the dough for about 30 minutes to firm it up.
  6. Once chilled, scoop out spoonfuls of dough, roll them into balls, and create a dip in the center with a measuring spoon.
  7. Place the balls on a baking sheet lined with parchment paper.
  8. Fill each indentation with pineapple preserves.
  9. Bake for about 15 minutes or until the edges are golden and the filling is bubbly.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For different flavors, try using other fruit preserves or adding a teaspoon of almond extract to the dough.
