- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 cups all-purpose flour
- 1 cup unsweetened shredded coconut
- 1/2 cup pineapple preserves
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the vanilla extract and mix well.
- Gradually add the flour, shredded coconut, and salt, mixing until combined.
- Chill the dough for about 30 minutes to firm it up.
- Once chilled, scoop out spoonfuls of dough, roll them into balls, and create a dip in the center with a measuring spoon.
- Place the balls on a baking sheet lined with parchment paper.
- Fill each indentation with pineapple preserves.
- Bake for about 15 minutes or until the edges are golden and the filling is bubbly.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For different flavors, try using other fruit preserves or adding a teaspoon of almond extract to the dough.
