Description

Delicious and fun grilled kebabs featuring juicy chicken, sweet pineapple, and colorful vegetables, perfect for gatherings or cozy dinners.


Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized cubes
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into pieces
  • 1 yellow bell pepper, cut into pieces
  • 1 medium red onion, sliced into pieces
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon garlic powder
  • 1 tablespoon honey or brown sugar
  • Salt, to taste (about ½ teaspoon)
  • Freshly ground black pepper, to taste (about ¼ teaspoon)

Instructions

  1. Cut the chicken breasts into bite-sized, even cubes for uniform cooking. Chop fresh pineapple into similar-sized chunks. Slice the bell peppers and red onion into pieces suitable for skewering.
  2. In a bowl, whisk together olive oil, lime juice, garlic powder, honey or brown sugar, salt, and pepper to create a marinade.
  3. Add the chicken pieces to the marinade and toss well to coat evenly. Cover and refrigerate for at least 15 minutes or up to 2 hours.
  4. Thread chicken pieces, pineapple chunks, red onion slices, and bell pepper pieces alternately onto skewers.
  5. Preheat the grill to medium-high heat and lightly oil the grates. Grill the kabobs for 10-12 minutes, turning occasionally until fully cooked and vegetables are tender.
  6. Remove from the grill and let them rest briefly. Garnish and serve with lime wedges.

Notes

For extra flavor, marinate the chicken overnight. Feel free to mix and match vegetables. Use wooden skewers? Soak them in water for 30 minutes before grilling.
