Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry to an even thickness and place it on a parchment-lined baking sheet.
- Spread the basil pesto evenly over the pastry.
- Layer the sliced tomatoes and mozzarella cheese over the pesto.
- Season with salt and pepper.
- Bake for 20 minutes or until the pastry is golden and puffed.
- Garnish with fresh basil leaves before serving.
Notes
For added flavor, use high-quality pesto and fresh mozzarella packed in water. Store leftovers in an airtight container in the refrigerator for up to 3 days.
