Ingredients

  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Powdered sugar for rolling

Instructions

  1. In a bowl, whisk together flour, ginger, cinnamon, nutmeg, baking soda, and salt.
  2. In a separate bowl, cream together the butter, oil, granulated sugar, and brown sugar until smooth.
  3. Add molasses, egg, and vanilla extract to the sugar mixture and mix until well combined.
  4. Gradually add dry ingredients to the wet ingredients, mixing until a soft dough forms.
  5. Chill the dough for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Form balls of dough and roll them in powdered sugar.
  8. Place on the baking sheet and bake for 10-12 minutes, until just set.
  9. Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
