- 1 cup pecans
- 1 cup brown sugar (light or dark)
- 1/2 cup unsalted butter (softened)
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 3 large eggs
- 2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a round cake pan, sprinkle brown sugar evenly on the bottom, and arrange pecans on top.
- In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Add eggs one at a time and mix well. Stir in vanilla extract.
- In another bowl, whisk together flour and baking powder. Gradually add to the wet mixture until just combined.
- Pour the batter over the arranged pecans and smooth the top.
- Bake for 30-35 minutes or until a toothpick comes out clean. Cool slightly before flipping onto a serving platter.
Notes
Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream. Wrap leftovers tightly for storage.
