Description

Delicious pecan pie truffles that deliver the rich, caramelly flavor of traditional pecan pie in a bite-sized treat, without the need for baking.


Ingredients

Scale
  • 1 cup chopped toasted pecans
  • 3/4 cup brown sugar
  • 1/4 cup graham cracker crumbs
  • 4 oz cream cheese, softened
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 8 oz good quality chocolate, for dipping

Instructions

  1. Toast the pecans in a dry pan for a few minutes, then let them cool.
  2. Mix together the toasted pecans, brown sugar, graham cracker crumbs, cream cheese, maple syrup, and vanilla until well combined and sticky.
  3. Scoop the mixture and roll into small balls, then chill for 30 minutes to firm up.
  4. Melt the chocolate, allow to cool slightly, then dip each truffle until fully coated.
  5. Place the dipped truffles on wax paper to firm up. Enjoy!

Notes

You can make these truffles ahead of time; they last up to a week in the fridge or can be frozen for up to two months. For a dairy-free version, substitute coconut cream cheese and vegan chocolate chips.
