A savory and filling overnight casserole layered with sausage, eggs, and cheese, perfect for breakfast or brunch.

- 1 lb ground sausage (spicy or mild)
- 8 large eggs
- 2 cups milk
- 2 cups shredded cheddar cheese (or mozzarella/pepper jack)
- 4 cups day-old bread, cubed
- 1 medium onion, diced
- Salt, to taste
- Black pepper, to taste
- Optional: 1/2 tsp paprika or red pepper flakes
Instructions
- Brown the ground sausage in a large skillet over medium heat, breaking it into small pieces. Drain excess fat and allow it to cool slightly.
- In a large bowl, whisk together eggs, milk, salt, pepper, and optional spices until combined.
- Grease a baking dish and layer cubed bread, followed by sausage and diced onion, then top with shredded cheese.
- Pour the egg mixture evenly over the layers and press the bread down to soak.
- Cover tightly with foil or plastic wrap and refrigerate for at least 6 hours or overnight.
- Preheat oven to 350°F (175°C). Remove from the fridge, uncover, and bake for 45 to 55 minutes until the top is golden and center is set.
- Let rest for a few minutes before slicing and serving.
Notes
Pairs well with fresh fruit, yogurt, or crispy bacon. Add extra cheese or herbs for flavor.
