Description

A savory and filling overnight casserole layered with sausage, eggs, and cheese, perfect for breakfast or brunch.


Ingredients

  • 1 lb ground sausage (spicy or mild)
  • 8 large eggs
  • 2 cups milk
  • 2 cups shredded cheddar cheese (or mozzarella/pepper jack)
  • 4 cups day-old bread, cubed
  • 1 medium onion, diced
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/2 tsp paprika or red pepper flakes

Instructions

  1. Brown the ground sausage in a large skillet over medium heat, breaking it into small pieces. Drain excess fat and allow it to cool slightly.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, and optional spices until combined.
  3. Grease a baking dish and layer cubed bread, followed by sausage and diced onion, then top with shredded cheese.
  4. Pour the egg mixture evenly over the layers and press the bread down to soak.
  5. Cover tightly with foil or plastic wrap and refrigerate for at least 6 hours or overnight.
  6. Preheat oven to 350°F (175°C). Remove from the fridge, uncover, and bake for 45 to 55 minutes until the top is golden and center is set.
  7. Let rest for a few minutes before slicing and serving.

Notes

Pairs well with fresh fruit, yogurt, or crispy bacon. Add extra cheese or herbs for flavor.
