Instructions
- Start by patting the roast dry and rubbing it with olive oil, kosher salt, black pepper, garlic powder, and thyme.
- Sear the roast in a hot oven-safe skillet or roasting pan at 450°F for 8–10 minutes to form a brown crust.
- Reduce the oven to 325°F and roast until the internal temperature reaches 125–130°F for medium-rare or 135–140°F for medium.
- Remove the roast, tent loosely with foil, and rest for 15–20 minutes before slicing thinly against the grain.
