A comforting one-pot dish combining chicken parmesan flavors with pasta, perfect for busy weeknights.

Ingredients

  • 1 pound chicken breasts, diced
  • 12 oz penne or rotini noodles
  • 4 cups chicken stock
  • 1 cup your favorite marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 3 garlic cloves, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs
  • A sprinkle of salt and pepper
  • Fresh basil leaves, chopped (optional, for topping)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken, Italian herbs, chopped garlic, salt, and pepper. Cook until chicken is no longer pink, about 5 to 7 minutes.
  2. Add marinara sauce and penne to the pot, then pour in chicken stock. Lower the heat once it begins to bubble.
  3. Cover and let it simmer for 12 to 15 minutes, stirring occasionally, until noodles are tender and most liquid is absorbed.
  4. Remove from heat, and stir in mozzarella and Parmesan until melted and blended.
  5. Top with fresh basil and serve hot.

Notes

Use fresh ingredients for better flavor. Adjust chicken stock for desired pasta consistency. Feel free to add vegetables for extra nutrition.
