- 1 pound chicken breasts, diced
- 12 oz penne or rotini noodles
- 4 cups chicken stock
- 1 cup your favorite marinara sauce
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 3 garlic cloves, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon dried Italian herbs
- A sprinkle of salt and pepper
- Fresh basil leaves, chopped (optional, for topping)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken, Italian herbs, chopped garlic, salt, and pepper. Cook until chicken is no longer pink, about 5 to 7 minutes.
- Add marinara sauce and penne to the pot, then pour in chicken stock. Lower the heat once it begins to bubble.
- Cover and let it simmer for 12 to 15 minutes, stirring occasionally, until noodles are tender and most liquid is absorbed.
- Remove from heat, and stir in mozzarella and Parmesan until melted and blended.
- Top with fresh basil and serve hot.
Notes
Use fresh ingredients for better flavor. Adjust chicken stock for desired pasta consistency. Feel free to add vegetables for extra nutrition.
