- 2 tablespoons Olive Oil
- 1 medium Diced Onion
- 1 pound Lean Ground Beef
- 1 tablespoon Chili Powder
- 1 teaspoon Ground Cumin
- Salt to taste
- Pepper to taste
- 3 cloves Grated Garlic
- 2 cups Peeled and Diced Sweet Potatoes
- 1 can Fire Roasted Diced Tomatoes
- 1 can Canned Diced Green Chiles
- 1 cup Water
- 1 cup Shredded Cheddar Cheese
- Cilantro to taste (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and cook until translucent.
- Add the lean ground beef and cook until browned, breaking it apart with a spoon.
- Stir in the chili powder, ground cumin, salt, pepper, and grated garlic. Mix well.
- Add the diced sweet potatoes, fire-roasted tomatoes, diced green chiles, and water. Stir to combine.
- Cover the skillet and let it simmer for about 15-20 minutes, or until sweet potatoes are tender.
- Remove the lid, sprinkle the shredded cheddar cheese on top, and cover again until the cheese melts.
- Garnish with cilantro, if desired, and serve warm.
Notes
Customize spices to your liking and consider a vegetarian version with black beans or lentils.
