Ingredients

  • 1 medium Diced Onion
  • 1 pound Lean Ground Beef
  • 1 tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • Salt to taste
  • Pepper to taste
  • 3 cloves Grated Garlic
  • 2 cups Peeled and Diced Sweet Potatoes
  • 1 can Fire Roasted Diced Tomatoes
  • 1 can Canned Diced Green Chiles
  • 1 cup Water
  • 1 cup Shredded Cheddar Cheese
  • Cilantro to taste (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and cook until translucent.
  3. Add the lean ground beef and cook until browned, breaking it apart with a spoon.
  4. Stir in the chili powder, ground cumin, salt, pepper, and grated garlic. Mix well.
  5. Add the diced sweet potatoes, fire-roasted tomatoes, diced green chiles, and water. Stir to combine.
  6. Cover the skillet and let it simmer for about 15-20 minutes, or until sweet potatoes are tender.
  7. Remove the lid, sprinkle the shredded cheddar cheese on top, and cover again until the cheese melts.
  8. Garnish with cilantro, if desired, and serve warm.
