Description

Ingredients

  • 1 cup uncooked rice
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cups chicken broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Toppings: avocado, cilantro, lime wedges, cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté the diced chicken until golden brown.
  3. Add bell peppers, onion, chili powder, cumin, salt, and pepper; cook until the veggies start to soften.
  4. Stir in the rice and mix well.
  5. Pour in the chicken broth and bring to a simmer.
