Ingredients

  • Pie crust (homemade or store-bought)
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 cups whole milk
  • 4 egg yolks
  • 1/4 teaspoon salt
  • 2 tablespoons real butter
  • 1 teaspoon pure vanilla extract
  • 1/4 cup cornstarch (or flour)
  • Optional: 1 teaspoon espresso powder

Instructions

  1. Preheat the oven and blind bake the pie crust until set and light gold.
  2. In a pot, whisk together the sugar, cocoa powder, and cornstarch.
  3. Pour in the milk whisking until combined and warm gently while stirring continuously to avoid clumping.
  4. Once thickened, temper the egg yolks by mixing a little of the hot mixture into them, then whisk them back into the pot.
  5. Bring to a boil for about 1 minute, then remove from heat.
  6. Stir in the butter and vanilla until glossy.
  7. Pour the filling into the baked crust and chill to set.

Notes

For added depth, stir in espresso powder to the filling. Top with whipped cream or chocolate shavings for decoration.
