Quick and easy energy bites made with dates, coconut, and cocoa, perfect for a sweet, chewy snack without the oven.


Ingredients

Scale
  • 1 ½ cups Medjool dates, pitted
  • 1 cup unsweetened shredded coconut
  • ¼ cup unsweetened cocoa powder
  • 1 tablespoon coconut oil
  • A pinch of salt
  • 1 teaspoon vanilla extract
  • Optional: extra coconut, cocoa, or chopped nuts for rolling

Instructions

  1. Pulse the pitted Medjool dates with shredded coconut, cocoa powder, coconut oil, salt, and vanilla in a food processor until the mixture clumps.
  2. Scoop out the mixture, roll into 1-inch balls.
  3. Optionally, roll the balls in extra coconut, cocoa, or chopped nuts.
  4. Refrigerate for 20–30 minutes to firm up.

Notes

For best texture, use soft, fresh Medjool dates and adjust the coconut for desired consistency. Store in an airtight container for up to 10 days in the fridge.
