- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 2 cups tart apples, chopped (like Granny Smith)
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
Instructions
- Prepare the crust: Mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan to form a crust.
- Make the filling: In a bowl, beat cream cheese, sugar, and vanilla until smooth. In another bowl, whip heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture.
- Layer: Toss the chopped apples with cinnamon and nutmeg. Spread half of the cheesecake filling over the crust, then add half of the spiced apples on top. Repeat with remaining filling and apples.
- Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 240 minutes or overnight to set.
- Serve: Slice the cheesecake carefully and serve chilled. Garnish with additional whipped cream or apple slices if desired.
Notes
Store leftovers in the refrigerator for 3 to 5 days, covered tightly. Do not freeze as the texture may change.
