- 4 cups powdered sugar (for frosting)
- Gel food coloring (various colors)
- ¼ cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two round baking pans.
- In a bowl, whisk together flour, baking powder, and salt; set aside.
- In another bowl, cream the butter and sugar until light and fluffy (about 3 minutes).
- Add eggs one at a time, mixing well after each addition, then stir in the vanilla.
- Gradually mix in dry ingredients, alternating with milk until just combined.
- Divide the batter into bowls and add gel food coloring to reach your desired neon shades.
- Pour each colored batter into the prepared pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool completely before frosting.
Notes
Allow cake layers to cool completely before frosting to prevent melting. Store in an airtight container at room temperature for up to three days.
