  • 4 cups powdered sugar (for frosting)
  • Gel food coloring (various colors)
  • ¼ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two round baking pans.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, cream the butter and sugar until light and fluffy (about 3 minutes).
  4. Add eggs one at a time, mixing well after each addition, then stir in the vanilla.
  5. Gradually mix in dry ingredients, alternating with milk until just combined.
  6. Divide the batter into bowls and add gel food coloring to reach your desired neon shades.
  7. Pour each colored batter into the prepared pans.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Cool completely before frosting.
