- 8 oz 70% dark chocolate
- 2 cups heavy cream
- 1 tsp vanilla extract
- Pinch of salt
- 3/4 cup sugar
- 1/4 cup cocoa powder
- 1 cup fresh strawberries
- 1 cup fresh raspberries
- Chocolate shavings for garnish
- Mint leaves for garnish (optional)
Instructions
- Chill a springform pan in the refrigerator.
- Melt the dark chocolate and allow it to cool slightly.
- Whip 1 cup of heavy cream until soft peaks form.
- Gently fold the melted chocolate into the whipped cream, then divide this mixture into three bowls.
- To one bowl, fold in vanilla extract and sugar to create the vanilla mousse.
- To a second bowl, fold in cocoa powder to create the chocolate mousse.
- In the third bowl, fold in pureed strawberries to create the strawberry mousse.
- Layer the mousse mixtures in the chilled pan, starting with the chocolate, followed by vanilla, and then strawberry.
- Repeat the layering until all mousse is used, ending with the strawberry layer.
- Cover and refrigerate for at least 4 hours or overnight.
- To unmold, gently run a hot knife around the edge and release the springform.
- Decorate with chocolate shavings, fresh strawberries, and mint leaves before serving.
Notes
For best results, use good quality chocolate and ensure all layers chill properly before unmolding.
