Ingredients

  • 1 boxed yellow cake mix
  • 1 stick (1/2 cup) of melted butter
  • 1 large egg
  • 8 ounces cream cheese, softened
  • 1 can (15 oz) pumpkin puree
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 stick (1/2 cup) of melted butter
  • 1 box (16 oz) powdered sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg (optional)

Instructions

  1. Preheat the oven and prepare your baking pan by lining it with parchment paper.
  2. In a bowl, combine the yellow cake mix, melted butter, and one egg to create the crust mixture. Press it into the bottom of the pan.
  3. In a separate bowl, beat together the softened cream cheese, pumpkin puree, 3 eggs, vanilla extract, melted butter, powdered sugar, cinnamon, and nutmeg until smooth.
  4. Pour the pumpkin mixture over the crust evenly.
  5. Bake until the center is set but slightly jiggly.
  6. Allow to cool completely before slicing to enhance the gooey texture.

Notes

This cake is better on the second day. Store leftovers in the fridge or freeze for later.
