- 2 cups granulated sugar
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1/4 cup brewed espresso or 2 tablespoons instant espresso powder
- 12 oz quality dark chocolate (60-70% cocoa), chopped
- Parchment paper for lining
Instructions
- In a heavy-bottomed saucepan, combine sugar, cream, butter, and espresso.
- Heat the mixture over medium heat until it reaches the soft-ball stage (234–240°F).
- Remove from heat and let cool to about 110–120°F.
- Beat in the chopped chocolate until the mixture thickens and loses its shine.
- Pour the fudge mixture into an 8-inch lined pan and chill for at least 2 hours until firm.
- Slice into 1-inch squares and serve or package for gifts.
Notes
Store in an airtight container layered with parchment. For best flavor, bring to room temperature before serving.
