- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 4 large eggs
- 1/4 cup brewed espresso
- 1 tsp vanilla extract
- 1 cup heavy cream (for garnish)
- Chocolate shavings (for garnish)
Instructions
- Preheat the oven to 325°F (160°C).
- Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat together cream cheese and sugar until smooth.
- Mix in eggs, one at a time, until just combined. Add espresso and vanilla; mix until smooth.
- Pour the filling into the crust and smooth the top.
- Place the pan in a larger pan filled with hot water (water bath) and bake for 60 minutes.
- Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
- Remove from the oven and chill in the refrigerator for at least 4 hours, preferably overnight.
- Before serving, whip the heavy cream and top the cheesecake with whipped cream and chocolate shavings.
Notes
Chill overnight for the best flavor and texture. Can be customized with different crusts or flavors.
