- 1/3 cup finely chopped dried cranberries
- 1/4 cup finely chopped green onion (optional)
- 1/4–1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1–1.5 cups toasted, finely chopped pecans
Instructions
- Soften cream cheese at room temperature for 20–30 minutes.
- Fold in chopped pineapple, cranberries, green onion, salt, and pepper until fluffy.
- Chill mixture for 30–60 minutes to firm up.
- Scoop 1-tablespoon portions with a mini cookie scoop and roll into balls.
- Press balls into chopped pecans to coat.
- Refrigerate for at least 30 minutes before serving to set.
