Description

Delightful bite-sized mini pecan pies with a sweet, gooey filling and crunchy pecans.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup sugar
  • 1 cup corn syrup
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Instructions

  1. Prepare a pie crust by mixing flour, butter, and salt. Press dough into a greased muffin tin.
  2. In a bowl, mix together eggs, sugar, corn syrup, vanilla, and chopped pecans.
  3. Pour the filling into the crusts.
  4. Bake at 350°F (175°C) for about 25 minutes, until set.
  5. Allow to cool before serving.

Notes

Chill the dough before rolling it out to prevent shrinkage. Use quality pecans for the best flavor.
