- 2½-inch rounds of pie dough
- 3/4 cup light corn syrup
- 1/2 cup packed brown sugar
- 2 large eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- Line a 12-cup muffin tin with pie dough rounds, pressed gently into each cup.
- Whisk together corn syrup, brown sugar, eggs, melted butter, vanilla, and salt.
- Stir in chopped pecans.
- Spoon about 2 tablespoons of the filling into each prepared shell.
- Bake for 18–22 minutes until centers are mostly set and crust is golden.
- Let pies rest at room temperature for 20–30 minutes before serving.
Notes
For best results, use an oven thermometer to ensure accurate temperature. Allow pies to cool to complete setting without drying out.
