Crispy outside and melty inside, these gooey cheese bites are perfect for any gathering or holiday celebration.
Ingredients

- 16 oz (450 g) fresh mozzarella, cut into 3/4–1-inch cubes
- 1 cup all-purpose flour, seasoned
- 2 large eggs
- 1/4 cup milk
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan
- 1 tsp Italian seasoning
- Oil for frying
Instructions
- Chill mozzarella cubes in the freezer for 30–60 minutes.
- Set up a breading station with flour, beaten eggs mixed with milk, and panko with Parmesan and seasoning.
- Dredge frozen cheese in flour, dip in egg, and coat with breadcrumbs. Repeat for a double coat.
- Fry in 2 inches of oil at 350°F until golden (about 1–3 minutes) or bake on a wire rack at 425°F for 10–12 minutes, turning halfway.
- Drain on a rack and serve warm with dipping sauce.
Notes
Freezing the cheese helps prevent leaking during cooking. Use a double breadcrumb coating for a thicker shell.
