Description

Delightful light and airy meringue cookies that are sweet, crunchy, and customizable.


Ingredients

  • 4 large egg whites (about 120g)
  • 1 cup caster sugar (200g)
  • 1 tsp pure vanilla extract
  • 1/8 tsp salt
  • Optional: Food coloring

Instructions

  1. Preheat your oven to 225°F (110°C).
  2. In a clean mixing bowl, beat the room-temperature egg whites until frothy.
  3. Gradually sprinkle in the caster sugar while continuing to whip until glossy with stiff peaks.
  4. Gently fold in the vanilla extract and a pinch of salt.
  5. Pipe small circles onto lined baking sheets, leaving space between each cookie.
  6. Bake for about 1 to 1.5 hours until dry and crisp but not browned.
  7. Turn off the oven and let the meringues cool inside for an hour.
  8. Carefully peel them from the parchment paper and enjoy.

Notes

Store in an airtight container at room temperature to keep fresh for 1 to 2 weeks.
