- 1 cup unsalted butter
- 1 cup pumpkin purée
- 1 cup brown sugar
- 1 cup granulated sugar
- 3 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup streusel topping (made with cold butter, flour, and sugar)
Instructions
- Brown the butter in a saucepan until golden brown and nutty.
- In a bowl, mix the brown butter with pumpkin purée, brown sugar, and granulated sugar until combined.
- Add in eggs one at a time, mixing well.
- In a separate bowl, whisk together flour, baking soda, baking powder, spices, and salt.
- Gently fold dry ingredients into the wet mixture until just combined.
- Pour batter into a greased loaf pan and sprinkle with streusel topping.
- Bake at 350°F (175°C) for 60 minutes or until a toothpick comes out clean.
- Allow to cool for at least 10 minutes before serving.
Notes
Serve warm with butter or cream cheese frosting. Can be frozen for up to 3 months.
