Description

A comforting soup that blends Mediterranean flavors with tender wontons filled with ground chicken, spinach, and feta cheese in a fragrant broth.


Ingredients

  • Wonton wrappers
  • 1 lb ground chicken
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 6 cups chicken broth
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon fresh dill, chopped
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish

Instructions

  1. In a mixing bowl, combine ground chicken, spinach, feta, oregano, basil, garlic, salt, and pepper.
  2. Place a teaspoon of the filling in the center of each wonton wrapper and seal tightly.
  3. In a pot, heat olive oil and add the chicken broth; bring it to a simmer.
  4. Gently add the wontons to the simmering broth and cook for 5-7 minutes, or until they float and are cooked through.
  5. Taste the broth and adjust the seasoning as needed.
  6. Serve hot, garnished with fresh parsley or dill.

Notes

For best results, use fresh ingredients and seal the wontons tightly. You can make wontons in advance and freeze them for later use.
