Ingredients

- 2 cups all-purpose flour
- 1/2 cup butter, cold and cubed
- 1/4 cup shortening, cold
- 1/2 teaspoon salt
- 1/4 cup cold water
- 1 medium onion, chopped
- 2 medium potatoes, diced
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 egg, for wash
Instructions
- Prepare the dough: In a bowl, mix flour, butter, shortening, and salt until crumbly. Add cold water to form a smooth ball. Chill for at least 30 minutes.
- Prepare the filling: Sauté onion, potatoes, and spices until fragrant.
- Roll out the chilled dough on a floured surface and cut into circles.
- Fill each circle with the savory mixture and fold over, sealing the edges tightly.
- Brush the tops with egg wash.
- Bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until golden brown.
Notes
Serve warm with cilantro chutney or sweet chili sauce. Store leftovers in an airtight container for up to 3 days.
