A delightful combination of tofu and gnocchi in a creamy sauce, perfect for busy weeknights or special dinners.

Ingredients

  • 14 oz firm tofu, pressed and cubed
  • 1 cup gnocchi
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup coconut cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the cubed tofu and cook until golden brown on all sides.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the vegetable broth, coconut cream, Italian seasoning, salt, and pepper.
  4. Bring to a simmer and cook for about 5-7 minutes until the sauce thickens slightly.
  5. Meanwhile, cook the gnocchi according to package instructions until they float.
  6. Drain and add the gnocchi to the skillet, tossing it to coat in the sauce.
  7. Serve hot, garnished with fresh basil.

Notes

For best texture, press the tofu well to remove excess moisture. Adjust seasonings to taste. Can customize with added vegetables.
