- 14 oz firm tofu, pressed and cubed
- 1 cup gnocchi
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 cup coconut cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add the cubed tofu and cook until golden brown on all sides.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the vegetable broth, coconut cream, Italian seasoning, salt, and pepper.
- Bring to a simmer and cook for about 5-7 minutes until the sauce thickens slightly.
- Meanwhile, cook the gnocchi according to package instructions until they float.
- Drain and add the gnocchi to the skillet, tossing it to coat in the sauce.
- Serve hot, garnished with fresh basil.
Notes
For best texture, press the tofu well to remove excess moisture. Adjust seasonings to taste. Can customize with added vegetables.
