- 2 cups mixed vegetables (carrots, celery, peas)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and sear until golden brown.
- Remove chicken and sauté onions and garlic until softened.
- Add mixed vegetables and cook for a few minutes.
- Return chicken to the pot, adding chicken broth and thyme.
- Bring to a simmer, then reduce heat and cook for 20 minutes.
- Stir in heavy cream and season with salt and pepper.
- Serve hot, garnished with fresh parsley.
