Description

A warm and comforting creamy soup that combines tender chicken and vibrant vegetables, perfect for impressing loved ones.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups mixed vegetables (carrots, celery, peas)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and sear until golden brown.
  3. Remove chicken and sauté onions and garlic until softened.
  4. Add mixed vegetables and cook for a few minutes.
  5. Return chicken to the pot, adding chicken broth and thyme.
  6. Bring to a simmer, then reduce heat and cook for 20 minutes.
  7. Stir in heavy cream and season with salt and pepper.
  8. Serve hot, garnished with fresh parsley.

For a dairy-free option, substitute heavy cream with coconut milk.
