Instructions
- Slice the cucumbers, tomatoes, and onion fairly thin.
- In a large bowl, combine the sliced vegetables.
- In a separate bowl, whisk together the vinegar, olive oil, sugar, salt, black pepper, and herbs if using.
- Pour the marinade over the vegetables and toss to combine.
- Let it sit for at least 30 minutes before serving, preferably overnight for better flavor.

Store in a tight-lid container in the fridge for 2-3 days. Best when consumed quickly to maintain crunch.
