Ingredients

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 1/4 cup maple syrup
  • 2 tablespoons garlic, minced
  • 1/4 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 1 cup Parmesan cheese, grated
  • 2 cups Brussels sprouts, trimmed and sliced into twists
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the maple syrup and minced garlic. Add the chicken pieces and marinate for 30 minutes.
  2. Preheat the oven to 400°F (200°C). Spread the Brussels sprouts on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until crispy.
  3. In a skillet, cook the marinated chicken on medium heat until golden and cooked through.
  4. In a separate pan, combine heavy cream, Cajun seasoning, and Parmesan cheese to make the Alfredo sauce. Stir until the cheese melts.
  5. Serve the chicken bites with the Spicy Cajun Alfredo sauce and crispy Brussels sprouts on the side.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop until hot. For the Brussels sprouts, reheat in the oven to regain crunch.
