- 6 slices bacon
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- Maple syrup for drizzling
Instructions
- Preheat oven to 375°F (190°C).
- Partially cook bacon in a 400°F (200°C) oven or skillet until starting to crisp (about 5–6 minutes).
- Chop the bacon into 1/2-inch pieces.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine milk, egg, and melted butter; whisk until smooth.
- Fold the wet ingredients into the dry ingredients until just combined.
- Stir in most of the bacon pieces.
- Grease a mini muffin tin and spoon batter into each cup, filling about two-thirds full.
- Top with remaining bacon bits and a drizzle of maple syrup.
- Bake for 12–14 minutes or until golden and set; cool for a few minutes before removing from the tin.
Notes
Store leftovers in an airtight container for up to 3 days. They can be frozen for up to 2 months. Reheat in a 350°F (175°C) oven for best texture.
