- 1 whole Mango
- 1 whole Cucumber
- 1 cup Blueberries
- 1 whole Avocado
- 1/4 cup Cilantro
- 2 tablespoons Olive Oil
- 2 tablespoons Lime Juice
- 1 tablespoon Honey
- 1 pinch Salt
- 1 pinch Black Pepper
Instructions
- Start by peeling and dicing the mango and avocado. Slice the cucumber into thin rounds.
- In a large mixing bowl, combine the diced mango, cucumber, blueberries, and avocado.
- In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper. Pour this dressing over the salad.
- Gently toss the salad to combine all the ingredients. Finally, sprinkle the chopped cilantro on top for an added burst of flavor.
Notes
Serve chilled or at room temperature. Best enjoyed within a day to prevent avocado from browning.
