Ingredients

  • Juice and zest of 2 limes
  • Fresh cilantro (or parsley if preferred)
  • Olive oil
  • Optional: 1 avocado, diced

Instructions

  1. Cut mangoes and other vegetables into small bite-sized pieces.
  2. In a large bowl, combine black beans, diced mango, tomatoes, onion, and bell pepper.
  3. Toss the ingredients together until well mixed.
  4. Squeeze lime juice over the salad, ensuring every bit is used.
  5. Add lime zest, olive oil, salt, and pepper to taste.
  6. Mix in chopped cilantro last for freshness.
  7. Taste and adjust seasoning as needed before serving.

Notes

For best flavor, prepare a few hours before serving. Add avocado right before serving to prevent browning.
